The Ingredients
2 cups all-purpose flour
1 rounded teaspoon baking powder
1 teaspoon vanilla
¾ cup sugar
1 egg plus 2 yolks
1 stick butter softened or 2 large tablespoons vegetable shortening
Pastry filling such as apricot, prune, blueberry, or cherry
The Directions
Preheat the oven to 375°. Grease a 10" springform
pan. Dust with sugar, then flour.
On the work surface, place 1¾ cups flour. In the center of the flour, make a well, and put into it the egg and two yolks, the vanilla, and the baking powder. Beat these with a fork. Then beat in the sugar.
Work the liquid mixture into the flour. Cut in the butter or shortening a little at a time, working it into the dough. If the dough is too soft, add the extra ¼ cup flour.
Divide the dough into two pieces: ¾ and ¼. Form a round base with the larger piece. Sprinkle the top of it lightly with flour. Fold the base in half temporarily, then transfer it into the pan and unfold (the flour keeps it from sticking to itself). Spread the pastry filling evenly onto the base.
Take
the reserved dough and divide into 14 pieces. Roll each into a
long strip. Lay seven strips evenly on top of the filling. Then
top those with the remaining seven strips at a different angle.
Sprinkle with sugar.
Bake at 375° on the bottom rack of the oven for 30 minutes. Transfer to the top rack for another 15 to 20 minutes or until lightly browned.
